Full courses with downloadable lecture notes and exams — the notes PDFs are ideal notebook sources.
These are lecture notes, problem sets and exams from real MIT courses, not a simplified version written for a general audience, which makes it one of the more rigorous free sources for a study notebook on a specific subject. The problem sets in particular are useful for testing whether your notebook can work through the material, not just summarize it. Not every course posts full notes or video, so coverage varies a lot by department.

Lecture notes and open textbooks are the highest signal-to-noise sources for studying — often better than the slides you were given.
